Shark Ambot Tik
Ambot tik in Mango Tree (Vagator).

Shark Ambot Tik o Ambot Tik de tiburón. Otro plato tradicional de Goa. Es un curry de color rojo sangre que se acompaña con arroz (o roti/chapati). Ambot significa agrio y tik picante. El tiburón recuerda al atún: un pescado con pretensiones de ser carne. Es un plato muy ácido, pero muy bueno.

Another traditional goan dish. It's a blood red coloured curry intended to be eaten with rice (or roti/chapati). Ambot means sour and tik means hot. Shark is similar to tuna: a fish with meaty pretensions. A very sour dish, nevertheless still  very good.

Shrimp biryani o Biryani de gambas. Biryani es un plato a base de arroz, especias y carne o vegetales. Algunos biryanis se hacen mezclandolo todo y son más secos, otros se hacen sirviendo sobre el arroz el curry con carne o vegetales. En Goa se suele servir el curry mezclado con leche de coco y pescado/gambas/sepia.

En mi caso, este fue el plato de la mayoría de los días. Más caro que lo que acostumbro a pagar, 80 rupias (1'20€), pero lo merecía. Es puro amor en un plato. Y muy picante, por favor.

Biryani is a dish made out of rice, spices and meat or vegetables. Some biryanis are made blending everything and can be more dry, others are served with the meat/veg curry (gravy) on the top of the rice. In Goa, it is usually cooked with coconut milk in the gravy and fish/shrimps/squid.

For me, this was the dish of most of the days. More expensive than what I was used to pay, 80 rupees (1,20€), but definitely worths it. It's pure love in a dish. And make it very spicy, please.
Gol Gappa (panipuri)







Literalmente, viene a significar “redondo (gol) a la boca”. También se llama panipuri (agua-pan frito). Es difícil encontrar un vendedor de Gol Gappaa que lo haga sin fallos: siempre les falta algo o no están balanceados. El vendedor coje un pan del tamaño de una pelota de golf, frito e inflado (hueco) y con su pulgar de dudosa higiene lo aprieta haciendo un agujero. Dentro del pan, pondrá una mecla que suele tener patata hervida, garbanzos (chana) y no sé qué más. Encima de la mezcla, debería poner un chutney (encurtido) dulce y el que no lo pone no tiene vergüenza ni honor. Luego, coje el panipuri y lo sumerge (junto a sus dedos) en agua con comino y chilly (jeera pani) a modo de cucharón. El jeera pani a veces está enfriado con hielo flotando, para que sea más agradable en verano. Lo normal es tomar 5 por un precio de 10 rupias (0‘15 €), el vendedor lo sirve en un platito hecho con hojas de no sé qué árbol. Al final, algunos le piden al vendedor que les rellene el platito con jeera pani. Es una de las cosas que cuando las haces los indios se ríen porque no hay mucho turista que lo haga. No es lo más higiénico que  he visto en mi vida pero no me he muerto por ello, y está muy bueno (depende del vendedor). No me quiero preguntar cuántas veces estos señores con bigotes se lavan las manos al día.


Literally, it means "round (gol) to the mouth". It´s also called panipuri (water-fried bread). It´s difficult to find a seller who makes it with no flaws: tere's always something missing or they are not well balanced. The seller takes a fried, inflated (hollow) round bread of the size of a golfball, and makes a hole with his doubtfully higienic thumb. Inside, he puts a blend which usually has boiled potato and chickpeas (chana) and something else. On the blend, he should pour a slash of sweet chutney, and the ones that don´t have it have no honour and are a shame. Then, he takes the panipuri and sinks it (along with his fingers) in water with cumin and chilly (jeera pani) like a scoop. Jeera pani is usually cold with a block of ice floating, so it can be pleasant in summer. The usual thing is to have 5 of them for 10 rupees (0'15€), the seller puts it on a small plate made out of leaves. At the end, some customers ask for a refill of jeera pani in the plate. It´s one of the things that make laugh indians when you do it since not a lot of foreigners do. It´s not the most higienyc thing I´ve seen in my life but I´m still alive, and I like it (depending on the seller). I don´t want to think about how many times those gentlemen with moustache wash their hands daily.

Desayuno indio. Indian breakfast.

Este es el desayuno indio (nastaa). El elemento básico es el paratha (o parontha), una especie de crêpe o pancake un poco grueso y aceitoso. A partir del paratha se pueden añadir más elementos. Lo normal es achaar (encurtido picante). Y me llamaban loco por comer picante en el desayuno en España. ¿Quiénes son los locos ahora, amigos? También se come con dahi o yogur con sal según gustos. Cuando hay sobras, se acompaña del curry del día anterior.

El desayuno de la foto fue preparado por la madre de Tarun en Delhi. Hecho de menos el sonido que me despertaba todas las mañanas: la taza de té que me traía la madre golpeando la mesa o la cabecera de la cama.

This is the indian breakfast (nastaa). The basic element is the paratha (or parontha), a kind of thick and oily pancake. Then you can add other elements to it. The most normal one is achaar (spicy pickle). and they called me mad because I was having spicy breakfasts in Spain. Who is the mad now, my friends? It comes with dahi or curd too, salted. When there are leftovers, we eat it with the curry from yesterday.

The breakfast from the picture has been cooked by Tarun´s mother in Delhi. I miss the sound that woke me up every morning: the tea cup that the mother would bring for me hitting the table or the bed headboard.


Veg y Non-Veg
En occidente consideramos la dieta omnívora como la normal, y el vegetarianismo y veganismo como excepciones. Aquí se designa todo con los términos Veg (vegetariano) o Non-Veg (no vegetariano). No hacen distinción entre ovolacteovegetarianos y veganos. Sin embargo, para ellos el Paneer (queso fresco) es Veg mientras el huevo es Non-Veg. Bastante comprensible viendo cómo viven las vacas en este país.

In occident we consider the omnivorous diet as the rule and vegetarianism and veganism as exceptions. Here food is distinguished between the terms Veg and Non-Veg. No diference between ovolactovegetarians and vegans. However, for them Paneer (cottage cheese) is Veg while eggs are Non-Veg. It's understandable knowing how cows live in this country.
